8 very ripe bananas smashed
8 Tbsp Olive Oil
3 Eggs
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 cup brown sugar
3 1/2 cups whole wheat flour
1 cup flax seed
4 heaping Tbsp brewer's yeast
1 cup whole oats
Mash together bananas, beaten eggs, oil, baking soda, baking powder, salt, flax and brewer's yeast. Then mix in brown sugar and flour. Lastly mix in oats. Pour into a loaf pan sprayed with cooking spray. Bake at 350 degrees for 45-55 minutes. Let cool 5 minutes before turning out of loaf pan onto cooling rack to completely cool. Slice and enjoy!

Yield: 4 mini loafs and about 15 mini muffins.
Do you remember in the original Sabrina movie, the Duke at the cooking school tells Sabrina that, "a woman happily in love burns the soufflé, a woman unhappily in love forgets to turn on the oven"? That is how I feel about the mini muffins. A little to well done. : )
Now, I couldn't find "Brewer's Yeast" anywhere. I went to whole foods and they said it was the same thing as Nutritional Yeast, which they did carry in the bulk section. A few internet sources said that they are two different things. Does anyone else know if they are? The nutritional yeast cooks really well at least!
